Butterballs

1 cup butter
4 heaping tbsp confectionary sugar
1 tsp water
1 tbsp vanilla
1 heaping cup of chopped walnuts
2 cups flour

Cream butter well.  Add sugar, vanilla, water, flour, and nuts.

Chill until stickiness is gone (about half an hour).

Roll into shape in palm of hand, place on greased cookie sheet.

Bake at 350 degrees for 12 minutes.

Let cool about 5 minutes and put on cookie sheet to cool.

After completely cool, roll in confectionary sugar.

Cut Out Cookies

1/4 cup butter
3/4 cup sugar
2 eggs
1 tsp vanilla
2 cups flour
2 tsp baking powder

Mix dough - should be somewhat sticky.  Put in fridge until stickyness is gone - about half an hour.

Roll out on floured table and cut out.

Bake at 325 degrees for 15 minutes on lightly greased baking sheet.

Rest on pan 1 minute, then put on cookie rack to cool.

Tuna Noodle Casserole

8 oz. egg noodles
2 cans tuna (drained)
1 1/2 cups sour cream
3/4 cup milk
1 tsp salt
1/4 tsp pepper

Topping:
1/2 cup bread crumbs
1/2 cup parmesan cheese
4 tbsp melted margarine

Bake uncovered at 350 degrees for 35-40 mins

Mom's Sour Cream Cheesecake



Filling
2 – 8oz. pkgs. Cream cheese
½ C. Sugar
3 Eggs (Lg.)
1 Tsp. Vanilla Extract
Topping
1 Pint of Sour Cream
¼ C. Sugar
1 Tsp. Vanilla Extract
Crust
3 cups finely crushed graham crackers (about 40 squares)
2/3 cup butter, melted
6 Tbsp sugar

Heat oven to 350 degrees.  In medium bowl, stir all ingredients until well mixed.  Press mixture firmly against bottom and side of a 9x13 glass plate.  Bake about 10 minutes or until light brown.  Remove and let cool.
Let cheese soften slightly then beat until creamy.  Add ½ cup sugar, then beat.  Add eggs, 1 at a time.  Beat well after each egg.  Add 1 tsp. vanilla, beat well.  Pour into prepared graham cracker crust.  Bake 350 deg for 20 min.  Remove and let cool.
Beat sour cream with ¼ cup sugar and 1 tsp. vanilla.  Beat well so that sugar liquefies.  Pour on top of cream cheese.  Bake 325 deg for 10 min.  Refrigerate at least 3 hours.  



Mom's Crumble Top Apple Pie


Pillsbury Pie Crust
¾ cup sugar
¼ cup flour
1 tsp cinnamon
1/8 tsp salt
6 medium empire apples
Mix sugar, cinnamon, flour, and salt together.  Peel & slice apples.  Mix apples with mixture.
Put a little flour on one side of the pie crust.  Place flour side down in pie plate.
Pour apple mixture into pie plate.

1 ½ cup flour
¾ cup room temperature butter
¾ cup packed brown sugar
Mix with pastry blender.  Top pie with mixture.
Bake at 425 for 40 minutes uncovered.  Cover loosely with aluminum foil and put back in for 10 minutes.

Puffed Apple Pancakes

1 cup whole milk
4 large eggs
3 tbsp sugar
1 tsp vanilla extract
1/2 tsp salt
1/4 tsp ground cinnamon
2/3 cup all purpose flour
4 tbsp unsalted butter
12 ounces Golden Delicious apples (about 2), peeled, cored, thinly sliced
3 tbsp packed golden brown sugar
powdered sugar (optional)

1. Preheat oven to 424 degrees.  Whisk milk, eggs, sugar, vanilla, salt and cinnamon in large bowl until well blended.  Add flour and whisk until batter is smooth.
2. Place butter in 9x13 inch glass baking dish.  Place dish in oven until butter melts, about 5 minutes.
3. Remove dish from oven.  Place apple slices in overlapping rows atop melted butter in baking dish.  Return to oven and bake until apples begin to soften slightly and butter is bubbling and beginning to brown around edges of dish, about 10 minutes.
4. Pour batter over apples in dish and sprinkle with brown sugar.  Bake pancake until puffed and brown, about 20 minutes.
5. Sprinkle with powdered sugar, if desired.  Serve warm.

Bacon Dip


8 oz. cream cheese, softened
1/2 cup mayonnaise
1 cup grated swiss cheese
1 package Hormel bacon pieces
Ritz crackers

1. Mix all ingredients (except crackers) with a mixer.
2. Spread in greased baking dish.
3. Top with crushed crackers.
4. Bake for 30 minutes at 350 degrees.
5. Serve with Ritz crackers.
